4 Major Categories of Frost Tolerance in Vegetables

The winter season can spell doom for your plants that aren’t able to stand freezing temperatures. But if there are vegetables that can’t stand the cold, there are definitely some varieties that can.

Some very hardy vegetables that can withstand even below-freezing temperatures are asparagus, collards, endive and kale. It’s best to plant them 4-6 weeks before the frost-free date.

There are also frost-tolerant vegetables, which means they can grow only light frosts. Some of these vegetables are broccoli, Brussels sprouts, celery, and beets. It’s advisable to plant them 2-3 weeks before the frost-free date.
